Chocolate banana crepes

I’m always trying to find creative things to make for brunch, my husband doesn’t eat meat or eggs, and I don’t east lots of veggies, so it cant be challenging. I woke up one Sunday morning and decided that i wanted to make pancakes, simple and delicious, right. Then i decided I wanted to be a little more creative, i wanted to make crepes, and i wanted to get really wild, i wanted to add bananas and chocolate syrup to the mix, why not, we were locked in because of the covid, lets get wild, as the kids say, you only live once.

Turns out we didn’t have enough bananas  after they were caramelized, that was a disaster, so instead i added shredded mozzarella to my husbands, and i salvaged a few bananas for mine. The fun part about being an amateur cook, I can make all the mistakes I want and nobody judges me, well expect me! They turned out pretty decent minus the weird bananas. I think the problem was that they were not firm enough, they needed to be a little more rip, but who could run out and get more while we are on lockup, so we used what we had 🙂 here’s how they turned out!

Here’s the crepe recipe.

2 large eggs

3/4 cup milk

1/2 cup water

3 tablespoons melted butter

1 teaspoon vanilla extract- i was out so i used Cuban white rum

1 cup of all purpose flour

2 tablespoons sugar

1/4 teaspoon salt

mix all items in a blender, or i used the kitchen aid, and it worked  great

chill the batter in the fridge for at least an hour, i think i left mine in for the full hour, and then did the bananas while it chilled

3 tablespoons of butter

3 large ripe and firm bananas-that part is really important

Slice the bananas into rounds, roll them in sugar and caramelize them until the edges start to turn brown, flip and do the other side. I burned the first round, so i had to throw them away, they were sticky, burned, hard sugar slices, so be careful how long you have them on the pan for.

Once crepe mix is ready take it out and add 1/4 cup worth of batter in the center of the pan and swirl the pan so it evenly covers the bottom, or looks thin. Cook the crepe until you see it bubble on the surface, then flip and do the other side for just a few seconds.

Now you can fill the crepe with the bananas and fold it like a burrito, and cover it with powdered sugar and chocolate syrup, or in my husbands case, mozzarella cheese. You can really add whatever you want to the center of them, the sky’s the limit folks, just have fun and enjoy!
