Ive had a weird on again off again relationship with the sugar cookie, i think I finally found the right one! I had this tub of 300 cut out shapes that i bought for $3usd, after Christmas and I’ve been dying to use them, so i made 5 dozen cookies and cut them out like crazy, not to long ago. When i made the ones that I’m about to show you, i got so excited about making them and accidentally mixed all wet and dry ingredients at the same time. I was a little nervous about how they would turn out, they were amazing, which made me happy, I didn’t want to waste 5 dozen worth of cookie dough. You live and you learn, and it ended up working out just fine. The best part was that i was recording live on facebook, hahaha!
Here’s the recipe for these delicious sugar cookies, its really simple
1 1/2 cups of softened butter
2 cups of white sugar
beat those until smooth
beat in
4 eggs
1 teaspoon of vanilla-i used Cuban white rum
then mix in
5 cups of flour
2 teaspoons baking powder
1 teaspoon of salt
cover and chill for at least one hour or overnight. I chilled it for a couple hours and when i took it out it was so hard, i figured it was because of the way it was mixed. I pried it out with a knife and then just proceeded to roll it really hard by hand for a while on a floured surface and eventually it softened up, it took some work though, not going to lie. Once it was softer i was able to take the rolling pin to it and roll it into about 1/2 thick dough. Cut out all the shapes and put them on an ungreased pan in the preheated 400 degree oven for 8.5 mins. Took them out, let them cool and decided not to frost them because they tasted so good it wasnt necessary. Now we have cookies to last us for days and days, it made a little over 5 dozen, i used a lot of big cutouts, i bet you could get 7 dozen out if you used all small cutouts.
