Falafel

I’m always trying to keep my husbands meals fresh, he doesn’t eat meat and i do, so I have to find things to cook for him when i feel like having burgers. I bought falafel mix in the store one time and it was okay, I decided what the heck, why dont i just try making it, we got a food processor for our wedding, lets put it to work. Ive made them a few times and sometimes they just dont work out, and they completely fall apart, sometimes they are too think and weird to eat, it’s just a matter of practice with these interesting things.

Here’s the recipe

2-15 oz cans of chick peas

1/2 red onion

1 handful of fresh parsley and 1 handful of cilantro

4 garlic cloves

1 tsp salt

1/2 tsp cayenne

1 tsp cumin

1 tsp baking powder

1/2 cup of flour-i use all purpose but you can use chick pea as well

1/4 cup of cooking oil for frying

rinse and drain the chick peas and add them to a food processor along with all the ingredients except baking powder and flour. Process until it forms a chunky paste, then place it into a bowl and stir in baking powder and add flour 2 tablespoons at a time until cohesive enough to form into patties. Fridge for an hour.

Here’s where it gets tricky for me, after an hour, take it out and form balls, and then make into patties, i sometimes have a problem and they fall apart, so I’ve started to leave in the fridge a little longer and that normally solves the problem. Once you have them in pattie form, fry them on  both side until they are golden brown and crispy.

I serve them over rice, or just as is, its a personal preference. They are fun to make, but you have to be patient. Enjoy
