In our family tortillas have always been more valuable than gold. My aunt would make them every Christmas, and it was a dog eat dog world that day, it was all man for himself to get the tortillas. She would make around a 100 early Christmas morning and would even give us a dozen as a Christmas gift! Naturally as i got older i wanted to make them myself, so i asked for my grandmas recipe, and started to make them. It’s been quite the learning process, turns out grandma and my aunt made it look much easier than it is, the most important thing is getting that cast iron pan to be HOT enough. I think i finally got it after a few years. I like to use them for enchiladas, or just a mid day snack with some butter, lets be honest, there’s no bad way to eat a tortilla! I now appreciate all my aunts hard work.
Here’s grandmas recipe.
4 cups of flour
2 teaspoons of salt
2 teaspoons of baking powder
mix all of these dry items together in a large mixing bowl.
then add 6 tablespoons of crisco, fold it into the dry mix
slowly add 2-3 cups of warm water while kneading the dough
let the dough rest covered for 15-20 mins
I always heat up the cast iron about 20 mins before i even think about making the dough, that way its nice and hot once the dough is ready
Once the dough is ready, start to form small balls, set aside, and then once all rolled into balls, start to roll them out with a rolling pin, or i also found a bottle of rum works in a pinch. Make sure to roll them nice and thin, the thinner the better, place them on the hot cast iron and once it starts to sorta bubble up flip it over for a few seconds, until it also bubbles.
I find storing them in either foil or paper towel , covering them as you add them to the stack, works best. Make sure they are wrapped and kept in an air tight container, that will keep them soft.
You first few batches may not be perfect, experiment around with the heat, you’ll eventually get it. I have also experimented with making them by hand, like grandma used to do, as well as mixing them in my kitchen aid, and the best results seem come from the kitchen aid, but thats just me, my aunt does it by hand and hers are amazing, so have fun and enjoy grandmas tortillas.
