I do love me a good ole fashion brownie, but now and then I like to spice them up a bit. I looked around the cupboards to see what i had to use to make a fancy brownie and I found peanut butter and bananas, and lots of both, so i thought let’s give this a shot. I will say that it was delightful, but to be honest it tasted more like a combination of a brownie and banana bread, but not super moist like banana bread. It was my first time making it, i will definitely make it again!
Here’s the recipe for the brownies
2 ripe bananas
1 cup of sugar
1/2 cup unsalted butter plus 1 tablespoon (for the pan)
1 tablespoon of Jameson
3/4 cup of flour
1/4 cup cocoa powder, plus 1 tablespoon (for the pan)
1/8 teaspoon salt ( i just added a pinch)
1/2 cups of peanut butter
2 ripe bananas-mash them in the mixing bowl, i used a big serving fork, it was a pain in the butt, but they have to be mashed good
add
1 cup of sugar
1/2 cup unsalted butter plus 1 tablespoon (for the pan)
1 tablespoon of jameson
whisk all ingredients until combined
then add
3/4 cup of flour
1/4 cup cocoa powder, plus 1 tablespoon (for the pan)
1/8 teaspoon salt ( i just added a pinch)
whisk until fully incorporated
Use the remaining butter to grease the pan and the remaining cocoa powder to dust in the pan then pour the batter into the pan.
Use 1/2 cups of peanut butter and add dollops on top of the batter and use a knife to swirl the peanut butter.
bake for 25-30 mins or until center no longer jiggles when you shake the pan. Let it cool for a bit and enjoy!
