My mom always likes to make enchiladas, and would always have them for us for dinner. When i moved away from home i really missed them and decided id make my own, they are so simple and kind of fun to make. You can be as creative with the insides or just simply add cheese. I make both beef ones and cheese ones since my husband doesn’t eat meat, well except bacon, i know, i know, haha!
Sometimes i make my own flour tortillas to use for them, which is a little extra work but super yummy. Most of the time i do use store bought corn tortillas because i can get more out of them and its less work, just being honest, plus i find the ones made from the homemade flour tortillas are a little thick and i can normally only eat like two or maybe three of them because they are super filling, so dealers choice.
So there really isn’t a recipe sorta speak, but this should help
3 cans of red enchilada sauce-thats an estimated number, its really a matter of how saucy you want them and how many you plan to make. We find 3 is a magic number for us to make about 20 or so. I spice up the mix by adding garlic, cumin, cayenne pepper, and chili powder.
a pack of corn tortillas, or you can make the flour tortillas i have on the blog
2 bags of shredded cheese, a taco blend and a pepper jack
chicken or ground beef unless youre a vegetarian
i like to use square pans and i pour some mix into the pan and swoosh it around and then start the process of placing a tortilla into the pan and then add cheese and meat or just cheese, roll them up and repeat. I used to dip the tortillas right into the bowl of sauce, but i found that they would stick to the pan that way, so i decided to instead dump the sauce into the square pans and use it as a lube sorta speak, and they slide right out.
once they are all rolled i pour the remaining sauce on top of the rolled enchiladas and then cover them in lots of cheese.
put them in the oven at 350 for about 18 mins or so, i check on them periodically, when they look nice and melted i take them out and serve right away. We normally have them with rice as a side dish or homemade corn tortilla chips. Enjoy
