I’m always trying to make different desserts, to mix things up, i don’t like to just make the same things over and over again. I was trying to think how I could make a combination cookie and cupcake, so i thought why dont i make a cookie dough and pour it into cupcake liners, and lets see what happens. Turns out they were absolutely delightful, and a change of pace. I wanted to mix two of my favorite ingredients, chocolate and peanut butter, and it turned out to be a great combo, as usual. I was debating whether or not to make a buttercream for them, but decided they were great on their one, but I may try making a peanut butter buttercream next time, just to see how it tastes. For some reason i didn’t take a lot of photos of these, but i will make them again and make sure to post more photos.
Here’s the recipe
1/2 cup of butter
1 large egg
3/4 cup light brown sugar, packed
1/2 cup of peanut butter
1/4 cup sugar
1 tablespoon Kahlua
1 1/2 cups of flour
1/2 teaspoon baking soda
pinch of salt
1 1/4 cups of chocolate chips
in a large bowl melt 1/2 cup of butter, let it sit for a min or so once its melted, so the egg doesn’t start to like cook
then add
1 large egg
3/4 cup light brown sugar, packed
1/2 cup of peanut butter
1/4 cup sugar
1 tablespoon kaluah or vanilla extract if you must
whisk all items until smooth
then add
1 1/2 cups of flour
1/2 teaspoon baking soda
pinch of salt
stir until well combined, don’t over mix, i think i did, but they turned out fine
then
stir in 1 1/4 cups of chocolate chips, I suggest stirring in, i tried to use the mixer to incorporate them and it didn’t work that well
pour into cups, dont over fill, i did and it was almost a mess
bake 11-12 mins or until toothpick comes out clean, oven at 350
