We were out of chips one night and really wanted nachos for dinner. I looked in the cabinet and noticed we had a surplus of corn tortillas, my wheels started turning and bam, i made some simple and amazing homemade chips!
these are really simple to make
you just need a deep pan for the frying oil. Ive used a wok, frying pans, and a dutch oven. I find the dutch oven works the best. It me a few times to get the perfect chip, ive finally gotten it!
fill the desired pan with enough oil to fry a full pack of tortillas, use the popcorn kernel test to figure out if the oil is hot enough, when the kernel pops the oil is at about 350
take a stack of corn tortillas out of the bag and cut it into fours, it will give you nice triangles for frying.
i normally put about 6 triangles in the pan at a time, i flip them a few times until they are a nice brown, id rather burn them a little bit than under fry them, under fried chips come out rubber like and hard to eat.
remove from pan and put into a paper towel lined bowl and salt or season them when hot, and repeat the process. A whole pack of tortillas make a big bowl of chips, we normally have them for a few days, i keep them covered when we arent eating them.
we normally make them for nachos, or a side dish with a meal.
