veggie fajita burritos

This is one of my go to meals for my husband, who is a vegetarian, it allows me to make meat ones for me and veggie version for him. They are really fun to make, a little time consuming, but easy. Next time i make them im going to put enchilada sauce and melted cheese on top of them, for a little extra yumminess, and aesthetic.

these are really very simple to make

1 red pepper

1 green pepper

1 yellow pepper

1/2 white onion

cumin

minced garlic

garlic powder

cayenne pepper

2 cups of rice

1 can of beans

cheese for inside of burrito

10 inch tortillas,  store bought, easier to use for burritos.

i chose to wok the ingredients together, but a skillet works as well.

i add hot oil and minced garlic to the wok, let it heat up a little bit, then add all ingredients and wok for a few mins until veggies are no longer firm.

while veggies are cooking i make my tortillas and set them to the side for later use

also make the beans and rice

when mix is done add them to the tortillas, add rice, beans and then cheese, than wrap the burrito, start with the two sides in and then roll.

put them on the hot pan for just a min or so until they are a little brown and sealed.

we normally serve with a side of rice or chips, but they are really filing without a side as well. enjoy!
