My husband and i love to have appetizers as dinner, you know like some people enjoy breakfast for dinner. so one of our go to restaurant apps is queso and chips, so i decided to recreate our favorite, at home. The first time i made it, im going to be honest, it was kinda gross, we used the wrong cheese. I feel like its important to no cut corners on the cheese, splurge a bit, youll notice the difference.
this one can be tricky and may take a few trial and error runs, but when its right, its so good!
heat 2 tablespoons of butter in a sauce pan, over a medium heat
whisk 2 tablespoons of flour into the melted butter until smooth
slowly pour 1 1/4 cup of milk, or more, depending on how thick you like it. it took me a few tries to get it right thickness
bring it to a boil
reduce heat to low and stir in 1/2 teaspoon cumin and 1/4 teaspoon of garlic powder. let simmer for two mins
then add 1- 8 oz package of your desired cheese, i use monterey jack personally.
stir constantly until melted, about 5 mins, here you could decide to add more milk possibly.
ive also added meat to mine, i love a beef queso, but the hubby is vegetarian, so i make his separate
