Nothing beats a chocolate chip cupcake with some gorgeous buttercream. Now that my buttercream game is completely on, i not gonna lie, its the best its ever been, sometimes i do like to toot my own whistle, i mean who doesnt, right? I decided to give it ago and make a batch, and they were amazing!
heres the recipe
1/3 cup of butter
1 cup of sugar
1 large egg
2 cups of flour
2 1/2 teaspoons of baking powder
3/4 cup of milk
1 teaspoon of kahlua
3 tablespoons of oil
2 cups chocolate chips
1 1/2 butter at room temp
5 cups of powdered sugar
1 1/3 cup heavy cream
pinch of salt
start off by lining a muffin tin with cupcake liners, set a side
cream together 1/3 cup of butter and 1 cup of sugar, beat for about 2 mins or so
add 1 large egg, should be room temp, and beat again
in a separate bowl sift together 2 cups of flour, and 2 1/2 teaspoons of baking powder and set it aside
in another bowl mix together 3/4 cup of milk and 1 teaspoon of kahlua and 3 tablespoons of oil
mix the dry ingredients with the milk mixture, and alternate beating after each addition
fold in the chocolate chips, i made the mistake of mixing them in with the mix master, yeah that was a mess and super annoying, but it worked
fill the liners about 2/3 full, i overfilled some of mine and they were really big when baked
bake for 16-17 mins or until toothpick is clean
let cool completely
then make the buttercream
ive tried making buttercream many times and some were pretty bad at first, but ive finally got it mastered. Its all about the right amount of butter and how long you mix it for. I found 10 mins to be the best amount of time.
1 1/2 butter at room temp
5 cups of powdered sugar
1 1/3 cup heavy cream
pinch of salt
beat until nice and fluffy
and then once the cupcake are cool, pipe the frosting on and enjoy!
