I am trying to include things that are really simple to make, and things that have a few more steps and are a little challenging, its fun to see what you can do when you push yourself. This is not one of those challenging items, just an easy and fun appetizer or to be honest, a meal on its own. I love nachos, i do eat them sort of plain, so i need to be creative with them, so they arent too boring. This is my boring version, but of course you can feel free to add whatever fancy dancy toppings you want. Ill just get you started.
tortilla chips
two eggs, cooked over medium
1/2 lb of bacon
8 oz bag of cheese
I like to make the chips the day before or the morning of, to make them i get a pack of corn tortillas, and cut the whole stack into fours, it gives you nice triangles. Then i fill a dutch oven with oil, about half way full, let the oil get to 350, use the popcorn kernel trick, it works. once the oil is ready i put about 4-5 triangles into the oil and let them puff up and flip them now and then until they look crispy, i tend to keep them in the oil a little longer, id rather it be a bit crispier than under cooked and tough to eat. Repeat until the whole pack is done, salt them while they are still warm. set aside
Make your eggs, bacon and other breakfast proteins
put a bunch of chips on a plate, layer with the eggs and bacon, add cheese, put in the oven (preheated at 350)for just a few mins so that the cheese melts. i suppose you could use the microwave, but youve made such an effort to make the nice chips, why ruin them in the microwave.
top with sour cream or salsa and enjoy!
