It appears that there is a corn tortilla strike or something going on, I haven’t been able to find them in the city of Chicago for the past 2 months, not a single package. Well that wasn’t going to stop me from enjoying the loveliness of a corn tortilla, so I decided to make my own from scratch! Let’s just say ill never buy them again, they turned out soooo good!
tortilla press
2 cups masa harina
1/2 teaspoon salt
1 1/2 cups of hot water
first you want to prepare the tortilla press buy wrapping the top and bottom of it in saran wrap, nice and smooth
mix the masa and the salt together in a mixing bowl, pouring the water in slowly and while mixing.
use your hands to knead the dough for a few mins, until its nice and smooth and not sticky. I’m normally a fan of doing everything mixing related in my KitchenAid mixer, but you need to do like our grandmas did it, by hand, you’ll get better results, I promise.
once the dough is nice and smooth cover the bowl with a towel for 30 mins
once the dough is rested, make the dough into little balls, press them and heat them on, the cast iron pan, that is the best pan to use, but any super hot skillet will work. Flip every now and then, look for nice dark marks on both sides.
place them in a towel as they come off the pan, stack them and wrap them, it will keep them soft, they will be a little stiff when they come off the pan.
