Now and then my husband and I like to have soup, the problem is trying to find one we both like, so that I don’t have to make two separate ones. We were able to come to a decision and this is what we agreed on, and it was out of this world! I did not make the bread bowls, only the soup. I do plan on making them soon.
4 potatoes
8 slices of bacon
4 tablespoons of butter
2 garlic cloves, minced
1/3 cups of flour
2 cups milk
1 cup half and half
2 cups chicken stock
1 tablespoon of salt
1 cup mild cheddar cheese
1 cup pepper jack cheese
1 cup sour cream
cook the potatoes in the microwave for 12-15 mins, cut them in half when they are done and let them cool
cook the bacon and crumble
in a pot melt the butter, garlic, and onion, cook for 3 mins
slowly whisk the flour into the pan and stir for 2 mins
slowly whisk in the milk and half and half
keep whisking until smooth
add the chicken stock a little at a time
bring to a light simmer and whisk in the salt and garlic
simmer until the soup has thickened
stir in bacon, and sour cream, remove from heat
scoop potato chunks into the pan breaking them into small pieces
garnish with bacon and cheese
