I recently made calzones and I had extra dough, I decided to put it in the fridge until I could come up with a way to use it, other than pizza. I decided to make cheesy garlic bread stix to go with our baked pasta, and they turned out amazing!
2 1/2 cups warm water
1/4 cup sugar
3 teaspoons instant yeast
1/4 cup oil
6 cups flour
2 teaspoons salt
1 cup minced garlic
1 egg, beaten
1 8 oz bag of shredded mozz cheese
in the mixmaster bowl combine the water, sugar, and yeast, let it sit for 10 mins until its nice and frothy
in a separate bowl mix the flour and salt
add the flour mix to the yeast, about 1/2 a cup a time
continue to add the flour until the dough can be pulled away from the sides of the bowl.
the dough will be sticky, that’s okay.
grease a large bowl and put the dough into the bowl, turn it once to coat with the oil and cover with plastic wrap and let it rest for an hour in a warm place
turn the dough onto a well-floured counter space and pull the dough towards the bottom while stretching it out to create a smooth ball, cut the dough into 3 equal pieces, make them into balls
i put two balls into a zip lock freezer bag and then placed it in the fridge to use later
roll out the ball into as close to a square as possible and then use a pizza cutter or knife to cut into slices to form the sticks
use an egg wash on them and then add the minced garlic and cheese
put in the oven for 10 mins at 475
serve hot
