we eat all kinds of different versions of potatoes in this house, and this is one of my absolute favorite versions and very simple to do! I promise you they will taste just like ones you’d get in a restaurant, if not better!
8-10 potatoes rinsed
extra virgin olive oil
cumin
garlic salt
cayenne pepper
cut the potatoes into little chunks, depending on what you are serving them with, if a side dish they can be a little bigger, if you are using them in tacos you’ll want to make them smaller.
put them in a pot of water and let them boil for 5-6 mins on a good rolling boil, once they are done drain and let cool for a min or so
put them into a bowl and add the oil and seasonings, mix them well in the mix, once completely coated transfer to a cookie sheet
put them in the oven at 400 for 45 mins, you can check them around the 40 min mark, they could be done by then, I normally let them go the whole time.
