Banana Chocolate chip Kahlua muffins

Now that we are essentially stuck in the apartment I have been doing a lot of baking and cooking and I try to stay creative so that it doesn’t get boring. I wanted to make banana bread one day with the extra bananas we had and then I decided to make muffins because the muffin pan was clean and I was lazy. Then I thought to myself, why not toss some Kahlua and chocolate chips in since we have lots of both, and these were created!

2 cups flour

1 tablespoon baking

1/2 teaspoon salt

1 stick of butter, softened

1 cup of sugar

2 large eggs

3 mashed bananas

1 cup chocolate chips

sift the flour, baking powder, and salt

beat the butter and sugar until light and fluffy, about 3-5 mins

add the eggs 1 at a time, beat for a min after adding each egg

add the banana and Kahlua and beat with the paddle until well incorporated

turn the mixer to low and add the flour all at the same time and beat until completely mixed

fold in the chocolate chips

spoon the mix into cupcake cups

bake for 15 mins at 350
