My husband and I love to have burritos and quesadillas for dinner, so I thought why not combine the two of them, I mean if taco bell can, why can’t I? haha! They were really fun to make and would be a fun thing for families to make together as well!
1 red pepper
1 green pepper
1 onion
1/2 lb of ground beef
2 cups of rice, prepared
1 can of beans, prepared
8 oz bag of shredded pepper jack cheese, or cheese of choice
burrito sized tortillas
cumin
cayenne pepper
garlic salt
saute the veggies with the seasonings
cook your protein if you are having one
pre-cook the tortillas for a few mins on each side
I went ahead and did all four right away that way they were ready to assemble when the veggies were done
first make your quesadillas
put cheese on one flour and cover it with another and let the cheese melt, flipping now and then so that it does not burn
once the quesadillas are done put rice, beans, veggies, and optional protein on top and wrap it like a burrito and put back onto the pan to seal it, I normally put some shredded cheese on the flap so that it melts it together nicely, once sealed and lightly brown it’s done
