strawberry cupcakes with whipped cream

One day I got a text from a friend asking if a couple of us would like to do a zoom cupcake showcase. I said absolutely, what are the details? We decided it would be music-themed with summer flavors, and that’s how these were conceived! Introducing strawberry fields forever shortcake cupcakes!

cupcakes

1 and 2/3 cups flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

1/2 cup melted butter

2 egg whites

1/4 cup strawberry Greek yogurt

3/4 cups milk

2 teaspoons Kahlua

strawberry filling

10 finely diced strawberries

1/2 cup sugar

2 tablespoons cornstarch mixed with 3 teaspoons of warm water, mix until smooth

whipped cream

1 and 1/2 heavy cream

3 tablespoons sugar

1 and 1/2 teaspoons Kahlua

first thingĀ  make the strawberry filling by putting the strawberries over medium heat while stirring for 4 full mins

add the sugar and cornstarch and stir for another 2 mins

remove from heat and set aside

make the cupcakes

mix together flour, baking powder, baking soda, and salt, set aside

mix melted butter and sugar in the mixing bowl using the flat paddle

add egg whites, yogurt, milk and Kahlua

add the dry ingredients slowly until no lumps, batter will be thick.

add to cupcake liners and bake for 17 mins at 350 or until a toothpick comes out clean. cool before filling and frosting

once they are cool pipe in the filling by cutting little holes in the center and cover the holes with the little piece you cut out

make the whipped cream

in the mixer, using the flat attachment, whip the cream, sugar and Kahlua on high for about 10 mins or colored until stiff peaks form

add the green coloring and mix for another min or so or until completely colored

pipe the whipped cream on, top with extra strawberries

fridge for a couple of hours and then serve, or eat right away if you can’t wait, and I would not blame you, but at least store them in the fridge when you’re done.
