strawberry cake with whipped cream

I really wanted to make a cake one day and I wanted it to be something different, I always seem to make the same ole cakes, so I decided to make a strawberry multi-tier cake, and this was the final product. Hands down it was the best cake I’ve ever made, super moist and yummy!

Cake

1 and 2/3 cups flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

1/2 cup melted butter

2 egg whites

1/4 cup strawberry Greek yogurt

3/4 cups milk

2 teaspoons Kahlua

strawberry fillingĀ 

10 finely diced strawberries

1/2 cup sugar

2 tablespoons cornstarch mixed with 3 teaspoons of warm water, mix until smooth

Whipped cream

1 and 1/2 heavy cream

3 tablespoons sugar

1 and 1/2 teaspoons Kahlua

 

first, make the strawberry filling

put the strawberries over medium heat while stirring for 4 full mins

add the sugar and cornstarch and stir for another 2 mins

remove from heat and set aside

make the cake

mix together flour, baking powder, baking soda, and salt, set aside

mix melted butter and sugar in the mixing bowl using the flat paddle

add egg whites, yogurt, milk and Kahlua

add the dry ingredients slowly until no lumps, batter will be thick.

separate and pour the mix into 3 cake rounds

bake for 21 mins at 350 or until the toothpick comes out clean

once the cakes are done place them in the freezer to cool quicker

make the whipped cream while the cakes are baking

in the mixer, using the flat attachment, whip the cream, sugar and Kahlua on high for about 10 mins or colored until stiff peaks form

once the cakes are completely cooled pipe the strawberry mix into each layer and stack each layer separated by whipped cream

then whip cream the whole cake and top with whole strawberries
