My husband and I really love both pizza and enchiladas, so one day I thought why not combine the two. Ok, ok, the actual story is I wanted to make a nacho pizza but didn’t feel like making queso or going to the store in the middle of a pandemic for one item, so I thought why not put some enchilada mix on the dough instead and create an enchilada on a pizza, and oh my it was amazing!
1 lb of ground beef
1 package of corn tortillas for the tortilla strips
1 large can of enchilada sauce
garlic
cumin
cayenne pepper
2 bags of shredded taco cheese (1 bag per pizza)
2.5 cups warm water
1/4 cup sugar
3 teaspoons instant yeast
1/4 cup vegetable oil
6 cups flour
2 teaspoons of salt
in a stand mixer bowl combine water, sugar and instant yeast, let sit until nice and foamy, normally for me its about 10 mins or so, then add the oil
in a separate bowl combine the flour and salt. add the flour to the yeast mixture in 1/2 cup increments, mixing well after each addition. The dough is going to be sticky, it’s okay.
grease a large bowl and scrape the dough into the bowl, flip the dough over once so it’s all coated, wrap with plastic and let it sit for an hour at room temp.
once its ready turn the dough onto a well-floured workspace and stretch it to create a ball, cut the dough into 3 balls.
i normally use two of the balls to make our pizzas and ziplock the other ball and use it later in the week.
while the dough is doing its thing I make the toppings for the pizza.
fry and season the beef
cut the tortillas into strips and fry them using oil at 350 degrees in a dutch oven, drop a popcorn kernel into the oil, when it pops its ready,
season the enchilada sauce with garlic, cumin, and cayenne pepper
if you prefer a meatless version you can substitute the beef with sauteed bell peppers and onions
once all the toppings are ready and your dough is ready and stretched out add the sauce, the beef, or veggies, or both, and a bag of the shredded cheese put in the oven for 10 mins, at 475, after about 5 mins pull it out and add the tortilla strips and cook the remaining 5 mins. The first time I made this I added the strips on the pizza right away and they ended up burning pretty bad, they were fine, but I figured out adding them halfway through works a lot better.
