Wild rice burgers

I always enjoy surprising my husband with unique veggie friendly dinners. I am a big fan of burgers, i love me a good big, juicy burger, but the husband doesnt, so my way to fix that, make him a meatless burger option to go along with my beef burger. He doesnt eat mushrooms, so thats one less option, thats fine, i have other ideas, and this was one of them, a burger with rice! He loved it, it was a pain in the butt to make, but to see his enjoyment was worth it.

heres the recipe

1/2 cup rice

2 tablespoons olive oil, divided

1/3 cup diced onion

1/3 cup celery

1 clove minced garlic

1/2 cup panko breadcrumbs

1/4 cup shredded parm cheese

1/2 teaspoon salt

1/2 teaspoon oregano

1/2 teaspoon thyme

1/4 teaspoon paprika

1/8 teaspoon cayenne pepper

2 large eggs

cook the rice and let it cool completly

heat 1 tablespoon of olive oil in a skillet over medium low heat and saute the onions, celery, and garlic. set it aside once its sauteed.

in a large bowl combine the sauteed mixture with the rice, breadcrumbs, cheese and all the spices, let it all cool down and then add the eggs, stir to combine

divide and make into patties on the skillet, fry about 3 mins on each side until brown and crispy.

serve on a bun with burger toppings. We like to have them with fries or tots!
