Potato boats

If you have been following this blog youll know how much i love a good appetizer, this is one of our favorites, they are really easy and fairly quick to make. The most annoying part is scrapping out the guts of the potatoes, but once you get a groove going it goes quick!

4 large baking potatoes

olive oil

garlic powder

cayenne pepper

1/2 lb bacon-prepared crispy

8 oz bag of shredded cheese

sour cream

chives

first step is to wash and cut your potatoes, as far as size goes, its dealers choice. If its just the two of us we may get 4 bigger potatoes, if we are having people over or want leftovers we may do a bunch of smaller ones.

once they are cleaned and cut in half its time to gut them. I use a spoon and gut them so they are pretty thin, like dont leave much inside. set them aside

make a mix of olive oil, garlic powder, a little cayenne and brush each boat with the mix

place them on a cookie sheet and bake them at 400 for about 45 mins or so, i start checking around the 30 min mark.

in the meantime make some bacon, i normally make like 8 strips, crumble them when they are cooked and cooled down

once they are done let them cool for a few mins

then add mozz cheese and bacon to each boat

put back in oven, but raise the temp to 450, bake for another 6 mins or so, you want the cheese to be nice and melted.

you can serve them with sour cream and chives, they make a good meal as well as appetizer.
