As you may or may not know, i tend to eat on the simpler side of life, i enjoy good quality food, but simple. That being said, i need to be creative, so im not bored, i like to mix things up and come up with things that may or may not have already been thought of, and make them a version i am happy with. I love pizza and quesadillas, so why not put them together, right? This is a really simple process and could have been included in the quick bites section as well, have fun and be creative!
1 package of burrito sized flour tortillas, for this one i dont use my homemade tortillas, they are too small
pizza sauce
8 oz bag of shredded mozz cheese
1 pound of seasoned ground beef (cooked)
1/2 pound of bacon (cooked)
raw spinach
minced garlic
start off by sauteing the spinach, bacon and minced garlic, i just put a spoonful of minced garlic in the pan and let everything cook in it. set it aside
you beef should already be cooked, i season it with garlic salt, and Italian seasonings
i also like to cook the tortillas lightly on both sides and set them aside until you are ready to assemble.
once you are ready, spread the pizza sauce onto the tortilla, add cheese liberally, then add your bacon mix or beef, whichever you prefer, or you could really be an animal and add both! My husband doesn’t eat beef, so he gets all the bacon.
now that its build to your liking, add another tortilla on top, like a sandwich, and carefully place it onto a large pan, ungreased
let it sit for a bit while the cheese melts, then give it a flip and let it brown, not burn
serve with extra side of sauce
