roasted eggplant

I love having burgers or brat patties for dinner, but my husband doesnt eat meat so i have to find substitutes for his “burger”. Ive come up with some crazy time consuming ideas, that i have posted on this blog and some easy ones, like this one. He loves it and only takes a few mins to prep and like 15-20 to roast!

two medium sized eggplants

1 egg

1 cup of flour

2 cups of breading ( i use the store bought, for now)

8 oz bag of shredded mozz or pep jack cheese

hamburger buns and burger condiments

wash and cut the eggplant

cut it into circles, like a burger shape

dip into the flour mix

then the egg mix

then the breading

place them onto a non stick sheet

place in oven at 350 for 20 mins or so

at about 18 min mark i put cheese on top of a few of them

serve on a bun with your favorite condiments!
