german pancakes with apples

I remember eating a dish like this at a brunch spot in madison, wi and loooooving it, so I figured hey we have a cast iron pan, so why not give it a shot. It turned out really good, I was impressed!

1/2 cup flour

1/2 cup milk

2 large eggs

2 tablespoons sugar

1 teaspoon kahlua

1/2 teaspoon salt

2 tablespoons butter

2 apples, diced

add the flour, milk, eggs, sugar, kahlua, and salt in a food processor or blender, blend for 10 seconds, scrape the sides and blend for 10 more seconds, the batter will be very liquidy, rest batter for 25 mins

place your 10 inch skillet in the oven at 425

remove the skillet when you’re ready to make the pancake, add the butter and coat the bottom and sides of the pan

add apples and pour batter over apples

bake for about 17 mins or so, until golden brown
